Now that winter is setting in, how are you keeping you printing trays warm. I though about water baths but even that cools down quickly here in Melbourne. Or do you just warm the room up to 20 deg for a while before going into a print session just to bring everything up to temperature.

Warm the room! I set the darkroom airconditioner on reverse cycle and take the room up to 23 Celcius. At that temperature everything works a treat and I often put in a few extra hours to avoid the cold outside.

Brewers Mats are an interesting idea. Warming the room seems the easiest, my RC A/C is in a adjoining office with only a door connecting, but the warm air does work its way in just not super efficient.
